Summer BBQ | Photo Diary

The British summer is now in full swing and what is summer without a few BBQs?  This is a Photo Diary about memories I made over the weekend with friends. See what we got up to, what we ate and what we drank.

First off, I would like to say a huge thank you to my boyfriend Clark, for being head chef of the BBQ. He did a fab job! (He's going to kill me when he sees this picture haha.)
We started prepping for the BBQ the day before. We ordered a big batch from our local butchers 'Brown's Family Butchers Grimsby'. We decided to indulge in some yummy ribs and traditional BBQ food, such as burgers and sausages. We also thought it would be fun to try some of the exotic burgers and sausages they had to offer, including crocodile, zebra and ostrich.
 I left Clark in charge of the meat, as he enjoys making his own marinades and sauces.
 Once the ribs were all prepped, we slow roasted them in the oven until they were soft. Then once they had cooled down to room temperature, we stored them in the fridge so they would be ready to put on the BBQ.

Hand picked strawberries from the garden. These are going to be used for strawberry daiqurirs. 




 
 Once I had collected all my strawberries and prepped them, I placed them in a blender and reduced them to a mush.
 Next I strained the strawberries through a sieve, this stop some of the thicker pulp and pips. I then stirred in some sugar and my mix was ready for the daiquiris. Other preparation for the cocktails included squeezing fresh limes, so the juice would be ready for use. I saved prepping fruit for garnish for the next day, so it would be more fresh.

Strawberry Daiquiri recipe:

5 large Strawberries for mix and extra to garnish
2 teaspoons White sugar
2 oz White rum
1/2 oz Lime juice 
1/2 cup Crushed Ice

We also decided to make a batch of Clark's famous chocolate brownies. (Recipe may be coming soon to the blog ;)! )

 On the day of the BBQ I prepared the salad. If you are after a summer salad recipe to try out, check out mine here.
 We prepped our prawns, then simply wrapped them in tinfoil ready to cook on the BBQ.

Mojito Recipe: 

6 mint leaves
1 1/2 oz white rum
2 teaspoons brown sugar
1 oz lime juice
Soda water optional (traditional recipes only use rum)
Crushed ice
Limes sliced for garnish

 The day of the BBQ was a glorious day. The sun was out, beers and cocktails at the ready, delicious food to enjoy and most importantly good company!

The homemade strawberry daiquiris went down a treat!

Pinacolada recipe:

3 oz (3 parts) pineapple juice
1 oz (1 part) coconut cream
1 oz (1 part) white rum 
1 pineapple for garnish

 After we had all indulged in the BBQ food, we decided to get the games going!
We had to play the box game! This invlovles picking up a box with your mouth, while no other body parts touch the floor. After each round the box is made smaller and harder to reach. 
Always good fun, especially after a thew too many beers!
Clark was joint champion and managed to not split his jeans this time ha!
After a thew other party games and the sun had slowly disappeared, we wrapped up in jackets and got the fire pit going, although it was still a warm summers evening. We had a small acoustic jam around the fire, it was nice to listen to our friend Jase play (lead singer of The Brew.) Chinking our whisky glasses, we listened to the crackle of the fire to early hours of the morning. Such a wonderful evening with friends, a night that won't be forgotten.
