Blueberry Buckwheat Pancakes

With Pancake Day fast approaching, (yippee!) I have been experimenting with different recipes and I've finally found my healthy/dreamy concoction for all you superfood crazed foodies like me! If you follow me on Instagram, you will have seen me going pancake crazy at the minute! I just can't get enough of these healthy Buckwheat Blueberry Pancakes! Thick, fluffy and comforting mmm. These are no ordinary pancakes, these are healthy American styled pancakes *drools*. 
Buckwheat is a rich source of Sirtfood, basically the new 'superfood'. Keep with it people! Buckwheat is energising and nutritious. It is a fruit seed that makes a great substitute for grains for people who are sensitive to wheat or other grains. 
 I like to add blueberries to bulk up my American styled pancakes. There is something so satisfying about having hot, juicy blueberries, bursting with each bite. Blueberries are high in antioxidants and other nutrients so these stacks of goodness will not only keep you full all morning and not to mention super yummy but they are actually quite healthy!


To make a stack of 3 pancakes, (I recommend doubling portions if you are intending on sharing!) you'll need:
70g buckwheat flour
80ml milk
1x egg
100g blueberries
and that's it!!
Although, I recommend having them swimming in maple syrup or with my healthy jam/compote alternative (frozen mixed berries and honey needed), yum! 
 Simply add the flour, milk and eggs to a bowl and mix! Once you have created a thick, gooey consistency, stir in the blueberries.
 Get a frying pan on a high heat and add a tablespoon of oil, I like to use coconut oil but any oil will do!
 Using a ladle, spoon a third of the mixture into the hot pan. As the mixture is thick and heavy, it won't spread around the pan so just make sure to even out the mixture into a round shape. Fry until the bottom side is golden then flip to repeat the same on the other side!
 Ta'da! You have yourself a stack of dreamy, healthy American styled pancakes.
I highly recommend adding a drizzle of maple syrup *drools*.
 If maple syrup isn't your thing, why not try this simple and healthy berry topping, or both!?
Before cooking the pancakes get a pan on the hob and add a good dollop of honey (1x heaped tsp) and heat until the honey has melted. Then add 70g of mixed frozen berries. Stir the berries into the honey until they become soft and melted, mmm. The longer you cook the berries the thicker and more jam-like consistency you will make.

 Add the hot, tangy berries on top. Delicious!
 Now for the best bit: tucking in!
 Layer after layer of fluffy goodness and blueberries oozing all over the place mmm!
